Microbiological, Chemical composition and quality evaluation of fast food sandwiches sold in Khartoum state

Abstract
This study was conducted to evaluate fast food or street food sandwiches Chemical and Microbiological composition value in Khartoum state, the sandwich samples which consist of (Burger, Tamia, shawrma of chicken and beef). Purchased from various cafeterias in Khartoum State, (Khartoum, Khartoum North, and Omdurman) in three replicates for each one types and areas, new paragraph chemical and Microbial characteristics were evaluated. The chemical composition of sandwiches was differently in moisture, protein, fat, ash, and crude fiber, among the same type of sandwich and location areas, moisture content % significantly different in burger, Sharwma (beef and chicken) among the location area no different in tamia sandwiches, protein content significantly different in shawrma beef and tamia without differently in burger and shawarma of chicken sandwiches. Fat content %, ash% and fiber%, had no significantly different in burger, tamia and Shawrma (chicken or beef). New paragraph pH value, acid value, peroxide value was determined for sandwiches among the location area around Khartoum state.
Microbial analysis for sandwiches total bacterial count had no significantly different in sandwiches of burger and tamia in Omdurman, sharwrma (beef, and chicken) and tamia in Khartoum, shawarma chicken and tamia in Khartoum North, high value shawarma beef Khartoum North ((103×34.7. Salmonella was detected in burger and tamia in Khartoum North, beside shawrma (beef and chicken) and tamia in Khartoum, and no detected in Omdurman sandwiches, high value in shawarma beef Khartoum (103×5). Staphylococcus auraus higher contaminated in Khartoum and Khartoum North and lower in Omdurman sandwiches high value shawarma chicken in Khartoum ( (102×30, Mold had no detected in Khartoum for four type of sandwiches, on the other hand, was detected in Khartoum North in each one, and detected in Omdurman burger sandwiches, Yeasts were found in four type of sandwiches in Khartoum North, also detected in burger and tamia of Omdurman, shawrma ( beef, chicken ) and tamia in Khartoum .
