Abstract
This study was conducted to evaluate the chemical and microbial quality of Tamia (falafal) sandwiches ready to consumefrom restaurants and cafeterias in Khartoum State. Samples collected from different locations. (Khartoum, Khartoum North, and Omdurman). Microbial and chemical characteristics were evaluated.
