Quality Evaluation of Some Sudanese Honey

Abstract

Abstract This study was carried out to investigate the physiochemical properties of 8 local honey samples collected from different flora and different geographical regions in Sudan. The physicochemical parameters like moisture content, refractive index, brix(total sugar), pH, total acidity, ash content, HMF level and Electrical Conductivity were analyzed according to the International Honey Commission. The pH of honey samples ranged between (4.40 to 6.00); moisture content between(13.4-25%) and refractive index from(1.4636-1.5034). The brix content ranged from (68.7-84.3 %);total acidity from(20-96 meq/kg); the ash content ranged from (0.1950-0.4975 %) and HMF level from(8.99-1140.28 mg/kg) and Electrical Conductivity(0.54 to 2.14) . The results were compared with previous studies and the limits of Codex Almentarious Commission and showed conformity with these standards in most of the studied samples. The result of this study indicated that honey samples were mostly of good quality. The quality of honey samples differs on account of various factors such as season, processing conditions, floral source, geographical origin and storage period

المستخلص تم في هذه الدراسه تحديد الخواص الفيزوكيميائيه لعدد 8 عينات عسل من مصادر نباتيه متعدده ومناطق جغرافيه مختلفه في السودان. الخواص الفيزوكيميائيه كمحتوى الرطوبه ومعامل الانكسار والتوصيليه الكهربيه والسكريات الكليه (البركس) والحمضيه الكليه ومحتوي الرماد وال pH ومستوي ال HMF حللت تبعا لطريقه جمعية العسل الدوليه. كان محتوي الرطوبه بين (%25-13.4) ودليل الانكسار(1.4636-1.5034) و التوصيليه (0.54-2.14) والسكر الكلي((%84.3-68.7 والحموضه الكليه(meq/kg96-20) ومحتوي الرماد%0.4975-0.1950) ) وال pH(4.40-6.00) ومستوي ال HMF(mg/kg8.99-1140.28 ) . قورنت كل النتائج بدراسات سابقه وبنتائج لجنة هيئة الغذاء العالمي (Codex Almentarious Commission) واظهرت تطابق والتزام بهذه المعايير في معظم عينات الدراسه. نتائج هذه الدراسه اثبتت جودة عينات العسل السوداني. يعزى اختلاف جودة العسل السوداني لظروف المناخ واختلاف المصادر النباتيه والمناطق الجغرافيه .
