Abstract

Proximate composition and mineral s content of five spe cies of edible mushrooms namely species Agaricus bisporus , Agaricus bisporus , Pleurotus eryngii , Lentinula edodes and Flammulina velutipes . Sample which obtain from UAE, it is Crude protein, total lipids, total carbohydrates, and dietary fiber content in mushrooms were found to be in the ranges of 28.55 - 58.05, 2.37 - 4.33, 52.9 - 78.24, 44.8 - 71.51 and 4.82 - 7.48 % of fresh edible portion (EP) respectively. Moisture and ash content were found to be in the ranges of 10.46 - 17.79 and 5.67 - 10.48 % of fresh EP respectively. The mineral content of calcium, magnesium, iron, sodium and potassium content in mushrooms were found to be in the ranges of 8.79 - 45.59, 35.92 - 81.40, 10.51 - 22.59, 19.62 - 340.99 and 189.63 - 201.56 % . It is shown that the investigate d mushrooms were rich sources of protein , f iber and carbohydrates and had low amounts of fat. Metal contents of the studied mushrooms were highly sodium, potassium and magnesium. The results make these wild edible mushrooms popular to consume as good food sources.
