Item Effect of Different Processing Techniques on Nutritional Composition and Anti-Nutrient Content of Pigeon Pea Seeds (Cajanus cajan L.)(2009) SALMA AWAD ELBALOLA HASSONAAbstract This study was conducted to assess children physical and mental health. The blood sample and questionnaire data were collected From children between 3-9 years in East Nile Province in Kober, Alkabashy and Alsaggay to determine the relationship between level of nutrition and child health and growth, clarify the role of food habits in those areas, show the importance of nutrition education to mothers, and to survey the relevant diseases that affect children in that areas. Ninety children were randomly selected from, Kober, Alkabashy and Alsaggay areas. The nutritional status of the children was assessed by anthropometric measurement and chemical analysis and the intelligence was assessed by Stanford Bene test. The blood samples were collected to estimate serum albumin, hemoglobin and to count total white blood cells. The study revealed that the nutritional status of children was 36.2% of the children were severe malnourished, 24.2% moderate malnourished, 18.8% well nourished. The study also indicated that there were many factors which effect the dietary intake of children in that areas such as lack of food availability and its quality, lack of nutrition awareness, improper food habits, inadequate dietary intake, lack of health services, sanitation high incidence of childhood diseases and large family size. The study also founded that there is a relationship between adequate nutrition and level of intelligence of the children. The study recommended awareness rising in regard to nutrition, environmental sanitation and poverty alleviation and prevention of infectious diseases.
